Triple Cream Cheese with Caramelized Apples
Serves 2 as an appetizer

A luscious Triple crème St. Andre cheese wheel with hot caramelized apples makes a striking accompaniment to a wine tasting.

1 small wheel of St. Andre or another Triple crème cheese
1 medium size apple (we use Granny Smith), remove stem
2 T. sweet cream butter
1.5 T. dark brown sugar
Pinch of cinnamon
Toast points or crackers

Slice the wheel of cheese and the apple long ways into 4 rounds. Carefully pop seeds out of the apple with the tip of a knife leaving the star-shaped core. Heat butter, sugar and cinnamon over medium-high heat and caramelize apple rounds until just-soft, about 5 - 10 minutes. Plate the cheese and apples in a Napoleon-style stack, alternating one slice of apple then one slice of cheese, beginning with cheese and ending with apple slice on top. Pour remaining butter mixture from hot pan over the dish to soften the cheese. Serve with toast points or your favorite cracker.
