Sweet Bones Muffaleta Caesar Salad

Caesar Salad

Eight servings

2 heads Romaine  lettuce, washed and cut into 1"x1" squares

1 cup good shredded Parmesan cheese

½ cup traditional Caesar dressing

1 cup croutons

1 cup olive salad, recipe below

Toss Romaine in just enough Ceasar dressing to lighty coat each leaf. You should have to toss the

salad for 30-45 seconds to do this if you have just enough dressing. It's better to add a little more

if you don't have enough than to use too much and have it soggy or too "hot". Top with cheese, croutons, and Olive Salad.

Olive Salad

1 cup green olives, rough chopped

½ cup black olives, rough chopped

½ cup Gardiniera, rough chopped

¼ cup diced celery

1 teaspoon minced garlic

1 teaspoon crushed red pepper flakes

1 teaspoon Sweet Bones Meat Rub or your favorite seasoning mix

1 teaspoon Oregano

1 Tablespoon Balsamic Vinegar

Extra Virgin Olive oil

Mix all ingredients and place in a container. Top off with olive oil and keep if refrigerator. Preferably let it sit overnight before using.
