Grit Cakes with shrimp, country ham, mushrooms ,tomatoes and spinach

Grit Cakes with shrimp, country ham, mushrooms ,tomatoes and spinach for 2-3 people 

-you will need organic stone ground grits from grocery

-cook 2 cups add shredded cheddar and put on sheet pan in refrigerator to cool for 4-5 hours

-peel 16-18 shrimp slice 8-10 crimini mushrooms, slice 10 grape tomatoes, julienne 2 slices of country ham, 1 bunch spinach 1 lemon squeezed

- cut grit cakes into triangles cover with buttermilk, dredge in flour, then deep fry for 4-5 minutes.

-Meanwhile, saute shrimp, ham, mushrooms, spinach and tomato in olive oil, for 2 to 3 minutes. Add a splash of white wine and squeeze lemon juice in the saute.

-Then add about half a cup of heavy cream and reduce to desired thickness. Add salt and pepper to taste. Plate the gritcake on the bottom, top with saute mixture.
