AATC Stuffed Bell Peppers

5 red bell peppers[Green if you prefer],cored and tops saved

1/2 lb grilled or roast pork

1/2 yellow onion,diced

1 red pepper,diced

2 Tbsp olive oil

1 cup cooked rice

1/2 cup salsa of choice

2 slices provolone cheese

Pinch of Krazy Salt and pepper

Bring large pot of water to boil;place peppers in water without letting them tip over.Parboil for 10 minutes.Saute onions and peppers for about two minutes.Add pork,slasa,rice,and spices.Lower heat and mix well.Pull peppers and empty any excess water from them.Stuff peppers with mixture,and top with cheese.Put in broiler for about 6-8 minutes or until peppers start to blacken.Place tops back on peppers,and serve with a nice salad.This a very satisfying meal with alot of flavor.I hope you enjoy this one as much as I do.Feel free to use any type of meat for stuffing as well.Shrimp taste really good prepared this way.
