Country Ham Sliders with Durbin Farms Peach Butter
Kentucky or Tennessee country ham (sliced medium-thick)
2 pounds peaches
1/2 cup sugar
1 teaspoon cinnamon
dash of nutmeg
The peaches need to be ripe. Cut an 'x' in the bottom of peaches with a sharp knife. Drop in boiling water for 1 minute. Remove with slotted spoon and place immediately in an ice bath. Let cool for 2 minutes.
Remove from the ice bath and the skins should slide off easily. Dice peaches and put in a thick-bottomed sauce pot with sugar and desired spices. Cook on very low heat, stirring constantly. Reduce until mixture becomes thick (usually a couple of hours).
If a smooth peach butter is desired, let cool a bit and place in a food processor and puree. Refrigerate.
