Kairos Corn on the Cob w/ Cilantro Butter
Recipe courtesy of James K Jones from Kairos Kafe
6-8 ears fresh sweet corn
1 cup unsalted butter, softened
2 bunches of Fresh Cilantro, coarsely chopped
2 tablespoons minced garlic
1 cup water
Cracked White Pepper
Preheat oven or grill to 375.
Shuck Corn and soak in a bowl filled with cold water. Tear off 6-8 pieces of Aluminum Foil and set aside.
Place one piece of corn in aluminum foil. Pull the edges of the foil up to make a makeshift bowl. Slather corn with about a tablespoon of butter, and a tablespoon of olive oil. Season with Sea Salt, Cracked White Pepper, and Minced Garlic. Cover Corn with Fresh Chopped Cilantro and a tablespoon of water.
Pull the edges of the aluminum foil up and close completely.
If you're using the oven, place corn in an oven-safe dish and cook for 45 minutes to an hour.
If you're cooking them on the grill place the corn seam side up on the grill for 45 minutes to an hour.
Serve immediately or keep covered in a warm place. The leftovers make wonderful a corn chowder, soup, or salsa.
