FIREBIRD'S BUFFALO MEATLOAF

INGREDIENTS:
2 TABLESPOONS OIL
1 1/2 CUP CHOPPED ONION
2 TABLESPOONS CHOPPER GARLIC
1 CHIPOTLE PEPPER
3 POUNDS GROUND BEEF
1/2 POUND GROUND BUFFALO
1/2 CUP A1
3/4 CUP EASY EGGS
3 CUPS PANKO BREAD CRUMBS
1/2 TABLESPOON SALT

DIRECTIONS:
HEAT OVER TO 300 DEGREES. HEAT OIL IN PAN. ADD ONIONS, GARLIC, AND CHIPOTLE. COOK UNTIL SOFT AND PUREE. PUREE MUST BE COOKED BEFORE MIXING. MIX ALL INGREDIENTS. WRAP TIGHTLY IN FOIL. BACK IN 9 INCH LOAF PAN AT 300 DEGREES FOR 45-60 MINUTES.

FOR THE GRAVY - COMBINE ABOUT TWO TABLESPOONS EACH OF FLOUR AND BUTTER. AFTER THE FLOUR COOKS, ADD 2 CUPS OF BEEF JUS.
