Ron Cook's grilled halibut

Chef Ron's Famous
Grilled Halibut with Mango Salsa

 4 to 5 ounce Halibut Filet
Dry Rub for fish
1 teaspoon salt
1 teaspoon of pepper
1 teaspoon of paprika

Mango Salsa (salsa should be prepared a day in advanced and placed in the refrigerator)
2 mangos
2 nectarines
½ purple onions (diced)
¼ cup green onions (sliced)
 1 bunch of cilantro
Mango vingeratte dressing
½ cup olive oil
1 tsp jalapeño pepper juice
In a medium skillet heat ¼ cup of the olive oil.  Pat fish dry.  Mix dry ingredients.  Coat fish on both sides with dry ingredients mixture.    Add fish to skillet and cook on each side for approximately 3 minutes on medium heat.  Remove fish from skillet and place on serving plate.   
To prepare Mango Salsa
Peel and cut into cubes the mango and nectarine. Place In bowl with purple and green onions, chopped cilantro, and jalapeño juice and mango salad dressing.
Use lemon or sliced jalapeno pepper for the garnish
