Chef Bob's Succotash

2 ears fresh corn (cut from cobb)
2 cups fresh okra (sliced)
1 onion (diced)
3 cloves garlic (minced)
2 tomatoes (diced)
1/2 cup tomato juice, fresh or canned
2 cups fresh lima beans
1 Tablespoon fresh thyme leaves
salt and pepper
4 Tablespoons olive oil
Sautee onion & garlic in oil. Add corn and okra. Add tomato juice, salt and pepper. Add lima beans and cook 3-4 min. Add thyme leaves.
serve hot or cold
