CHEF BOB'S FRIED OKRA & WATERMELON SALAD

OKRA
2 CUPS OIL FOR FRYING (HEAT TO 350 DEGREES) - OR USE HOME FRYER
2 POUNDS OKRA PODS - CAPPED & SPLIT
1 CUP BUTTERMILK
1 CUP PLAIN CORNMEAL
1/4 CUP PLAIN FLOUR
SALT, PEPPER, & PINCH OF CAYENNE PEPPER

Wash okra. Dredge in flour/cornmeal mixture. Dip in buttermilk then back in flour/cornmeal mix. Fry 3-4 minutes until golden.

Slice okra in round slices. Wash okra, dredge in flour/cornmeal mixture. Fry in iron skillet with 1/2 inch of oil.


WATERMELON SALAD
Cube yellow & red watermelon. Spring with salt & pepper. Add two tablespoons of cider vinegar or raspberry vinegar. Serve cold.
