Jumbo scallops

4 -5 large scallops

Blackening seasoning

2 tbsp vegetable oil

Cilantro pesto

1 cup prepared rice pilaf

8 - 10 spears grilled asparagus

Heat oil in medium skillet until hot. Dry and dust scallops with blacken seasoning and sear on both sides for 2 minutes. Remove from heat, serve over rice with asparagus and top with pesto b

-1/4 cup fresh spinach leaves

-1/4 cup basil leaves

-1 bunch cilantro leaves, stems removed

-2 tbsp pecans, toasted

-2 tbsp Parmesan cheese

-1/4 white balsamic vinegar

-1/4 cup olive oil

Blend all ingredients in food processor until smooth.
