Orange and apple shrimp and scallops

1. Peel and deseed 3 to 4 large oranges
2. peel and deseed 3 to 4 large granny smith apples
3. 1/2 cup white wine
4. 1 clove garlic crushed

1/2 cup red wine vinegar
dash lemon juice
salt and pepper to taste
5 large shrimp
3 large scallops cut in half
1/2 cup of evo extra virgin olive oil

Sauce

Puree apples and oranges. add vinegar and garlic to make a vinaigrette. Skewer 1 shrimp and a scallop. Add olive oil. Sear approx 30 seconds per side til golden brown. Add wine to deglaze. Add sauce. Reduce
