Kairos Broccoli Kasserole

4 cups frozen broccoli florets
1 cup mayo
2 large eggs
1 cup cheddar cheese
1 cup Cream of Mushroom
1/2 cup heavy cream
1 tablespoon heavy cream
3 cups soft bread crumbs *see note on the bottom
½ teaspoon minced garlic
Cracked Black Pepper
Cracked White Pepper
1 tablespoon unsalted butter
1 sleeve of crushed Ritz crackers
Cook about 5 cups of water in a saucepan, add salt, pepper, and garlic and bring to a boil. Add Broccoli, bring back to a boil, and strain. Preheat oven to 375.
Transfer Broccoli into a large mixing bowl. Add in Mayo, Cheddar, Eggs, Cream of Mushroom and heavy cream. Mix together with a spoon until ingredients become uniform. Add salt & pepper to taste, and fold in bread crumbs just until they are incorporated into mix.
Spray a 9X12 casserole dish with cooking spray. Put in a splash of heavy cream and even it out into the bottom of the dish. Sprinkle in garlic, and a dash of salt & white pepper. Spread out evenly and sprinkle crushed Ritz crackers over the top. Melt butter and drizzle over the top.
Cover with aluminum foil and bake in a 375 degree oven for 30 minutes. Uncover and cook just until the top browns.
Serve immediately or cover and keep warm until you want to serve it. Enjoy!
*I use leftover rolls from the Kafe to make my breadcrumbs, but any soft untoasted breadcrumbs will work (leftover rolls, biscuits, or any soft bread) I have found that Italian Bread Crumbs or Panko Bread Crumbs do not work well with this recipe.
