Fried Rice Stuffed Bell Peppers[All Around Town Catering]

4 large bell peppers,top off,parboiled

2 cups cool,cooked rice

2 grilled chicken breast,chopped

1/2 red onion,diced

1 tsp salt

1 tsp soy sauce

1 Tbsp sesame oil

2 Tbsp olive oil

1 small tomato,diced

2 Tbsp Thai chili sauce

Parboil you peppers for about 8 minutes.Remove from heat and run cold water over them.Drain completely.Heat your oils,fry rice for about 1 minute. Add salt,soy,onion,and tomato.Add cooked chicken breast for a minute.Stuff peppers and stand upright in foil in oven-proof dish.Add Thai chili sauce.Bake for about 15 minutes at 350 degrees.You can add cheese for a bit more flavor if you want.Serve with a salad for a complete meal that is very easy to prepare.Try this with any combination of stuffings,and you have discovered a bunch of new dishes.
