Seared chicken with wilted spinach, strawberries and apples

S&P chicken breast. Pan sear in olive oil. Remove from pan and add 8 oz. bag of spinach. Wilt for about 5 minutes. Remove from pan. Add 1 T olive oil.

Saute:

1 cup chopped apples
1 shallott - chopped
3 or 4 slices of ginger - diced

Saute for about 5 minutes and add 1 cup sliced strawberries and warm.

Put on top of chicken.
