Do Di Yo's Salmon Provencal Recipe

Ingredients:
Salmon Fillets
Ribbons of zucchini and carrots
Pickled onions
Sliced cucumber
Roasted red peppers
Sliced grape tomatoes
Broken tomato vinaigrette
Basil aioli
Fresh herbs:  dill, parsley and basil
Extra Virgin olive oil
Salt and pepper to taste

Procedure:
Heat olive oil in skillet.  Salt and pepper salmon fillets to taste and place in pan once oil in hot.  Meanwhile, toss zucchini, carrot, pickled onions, cucumber and grape tomatoes in a mixing bowl.  Salt and pepper to taste and add fresh herbs.  Finally, stir in broken tomato vinaigrette and mix thoroughly.  Place vegetable mixture on the plate and top with pan roasted salmon.  Finish with basil aioli and serve while hot.
