Kairos Cucumber-Tomato Salad

4 cups Seeded, Peeled Cucumbers, cut into cubes

(About 4 large cucumbers)

3 cups Fresh Tomatoes (a variety is better) cut into cubes

1 red onion, diced

2 cups Fresh Pineapple, cut into cubes

2 tablespoons fresh Dill, chopped

2 tablespoons fresh Cilantro, chopped

½ cup red wine vinegar

¼ cup extra virgin olive oil

3 teaspoons sugar

Sea Salt (to taste)

Cracked Black Pepper (to taste)

Cracked White Pepper (to taste)

Mix red wine vinegar, extra virgin olive oil, sugar, sea salt & pepper in a small bowl until sugar is dissolved. In a separate bowl, gently combine Cucumbers, Tomatoes, Onion, Dill & Cilantro. Pour the vinegar mixture over the cucumber/tomato mixture, and gently combine, taking care not to squish up the tomatoes & cucumbers. Serve immediately, or refrigerate a day ahead.

This side dish works great for Picnics and Summer Meals!
