Chef Ron's Famous
Chicken with Spinach Tomatoes
3 Roma Tomatoes (slice)
4 4 ounce Boneless Chicken Breast
1 Box Wheel pasta noodles
4 small mushrooms (slice)
1 cup fresh spinach
¼ cup parmesan cheese
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons sliced green onion
3 teaspoons olive oil
1 teaspoon fresh garlic
1 jar sun dried tomato alfredo sauce
In a medium pot prepare noodles as instructed on package.
In a medium skillet on medium heat, Add olive oil, garlic, sliced chicken breast. Cover and simmer for 4-5 minutes on each side; then add mushroom, spinach and tomatoes. Simmer for 3-5 minutes. Add salt and pepper.
Place prepared noodles in a plate, top with chicken mixture add green onion and alfredo sauce. Serve immediately.
Note: You can substitute any noodles in place of wheel noodles.
