Bright Star's Fried Jumbo Shrimp served with Cocktail Sauce

Serves 4

1 pound 16-20 count Jumbo shrimp, peeled and deveined

2 cup all purpose white flour

1 egg

1 cup of milk

2 cup of breading such as golden dip

1 cup vegetable oil for frying

Rinse shrimp under cold water and pat dry with towel.  Pour flour into shallow baking dish.  Whisk together egg and milk in second shallow baking dish.  In a third dish pour the two cups of breading.  Dip shrimp in flour mixture, dredge in milk mixture, letting excess drip on paper towel, and then dredge in breading.

Pour oil into electric deep fryer and heat to 325 degrees. Fry shrimp for 2 ½ -3 minutes until golden brown.

Cocktail sauce

1 cup ketchup

1 tbsp horseradish

1 tbsp lemon juice

1 tsp Worcestershire sauce

¼ tsp salt

¼ tsp pepper

Hot sauce to taste

Combine all ingredients and chill in refrigerator for 20 minutes.  Yield 1 cup.  Serve with shrimp.
