Benard Tamburello's Homemade Egg Pasta
3 cup all purpose flour
1 tablespoon extra virgin olive oil
2 pinches of salt
Pour flour into a mound. Take finger and push down in the center of the flour to make a hole that is about 2 inches in diameter. Crack egg into hole. Add oil & salt. Mix together until all is incorporated. Dough should feel like leather.
Add all ingredients into a cuisenart processor with the dough blade. Mix all ingredients together until it looks like grated cheese. Kneed & wrap it in plastic wrap and let it sit for one hour or until dimples appear in the dough.
Then cut it into the shape and size pasta you prefer.
