Potato and Vidalia onion soup

Wendy Cruse's Potato soup

1 bunch vidalias
3 small/medium potatoes
2 tablespoons olive oil
3-4 cups of chicken broth or vegetable broth
salt & pepper
bacon if desiered
saffron if desired

Wash onions and potatoes. Dice potatoes. Slice onions. Saute in olive oil for about 5 minutes. Add broth and salt and pepper. Simmer for about 20 minutes until potatoes are tender. Add sauted bacon and saffron last.
