Chef Bob's Cous-cous Fiesta

Ingredients:
1 package 5 minute cous cous - cook to directions on package
salt & pepper
2 tablespoons olive oil
2 cloves of garlic
1 onion, diced
1 cup corn
1 can black beans
1 can rotel tomatoes
2 tablespoons cilantro
1 lemon, juiced

Directions:
Cook cous cous to package directions. Set aside. Saute onion, corn, black beans, and rotel tomatoes in olive oil. After two minutes add cilantro, lemon juice, and salt & pepper. Toss with cous cous and serve.
