Bottletree's "Garden Grill" with Quinoa, Vegetables and Tofu, BottleTree Cafe
Quinoa is a protein-rich grain from South America with a nutty flavor and a texture not unlike cous cous.
You can get Quinoa from Whole Foods, Golden Temple or other health food store -- it cooks up quick, and is delicious and nutritious!
To make 1 serving:
**approx 1 cup cooked Quinoa
about 1.5 cups of a mix of sliced Onion, Green, Yellow, and Red Bell Pepper, Zucchini, Squash... you can use whatever you have on hand.
**Oil for sauteeing - 2 tbsp approx
**Soy Sauce - 1- 2 tbsp
**Put about one cup cooked hot Quinoa in your bowl (you can add a little olive oil to it and stir so that it doesn't dry out) and set aside...
Heat oil (light olive oil) in a skillet - add veggies -- then add cubes of extra firm Tofu - sautee all of it for about 3 or 4 minutes until veggies are tender but not limp....
*We pre-grill our Tofu at the cafe so that it has a firm crust on the outside. If you don't like Tofu, you can substitute grilled chicken.
**Add some Tamari / Soy Sauce near the end (a little Sweet Chili Garlic Sauce is also good).
Pour vegetables and the extra juice in the pan onto your bed of Quinoa, garnish with green onion and paprika, serve immediately!!!!
