Kairos Chicken Busbee
Recipe courtesy of James K Jones from Kairos Kafe
6 pieces boneless chicken tenderloins
1 cup White Wine
1 cup Heavy Cream
2 tablespoons Olive Oil
½ Cup Sundried Tomatoes
1 tablespoon Capers
1 pinch minced garlic
1 pinch fresh cracked white pepper
1 pinch fresh cracked black pepper
1 pinch sea salt
2 cups cooked Ziti or Rigatoni
Preheat sauté pan, and add olive oil. Add Chicken Tenderloins and sear on one side until golden brown. Turn chicken over and sear for about a minute.
Add Garlic and cook for about 60 seconds, taking care not to burn the garlic. Add white wine to deglaze the pan and cook until it is heated almost to a boil.
Add Heavy Cream, salt, pepper, and white pepper and stir until a thick sauce forms.
Add Sundried tomatoes, Capers, and Ziti. Stir lightly to get it all incorporated and bring to a boil. Reduce heat and simmer for about 6 minutes. Enjoy!
Pairs nicely with a salad and some crusty bread.
