Mashed parsnips w/ fried parsnip straws

Mashed parsnips w/ fried parsnip straw

4-5 parsnips (peeled cut in 1 in pieces)

2 tbsp olive oil

2 tbsp pesto or chopped basil

canola oil for frying

salt & pepper

Use 1 parsnip to make thin julienne pieces

Boile parsnips in water for 10-20 min

Drain & add oilive oil & pesto & salt & pepper

Meanwhile heat a pot of oil to 350 degrees & fry parsnip straw on paper towels.  Sprinkle w/ salt & serve
