15 EGGS
1 TOMATO, DICED
1 SMALL ONION, DICED
4 CUPS FRESH SPINACH, WASHED
3 TABLESPOONS OLIVE OIL
SALT & PEPPER
1/2 CUP FETA CHEESE, OPTIONAL

DIRECTIONS:
BRING 3 EGGS TO A BOIL THEN SET ASIDE COVERED FOR 10-12 MINUTES. CRACK REMAINING EGGS IN A BOWL. SAUTE ONION, TOMATO, AND SPINACH IN OLIVE OIL FOR 2-3 MINUTES. WHISK EGGS. ADD SALT & PEPPER. POUR EGGS OVER SPINACH MIXTURE. COOK LIKE ANY OMLET. TOP WITH FETA CHEESE AND BAKE FOR 3-5 MINUTES. GARNISH WITH BOILED EGGS.
