Sauteed Pork Tenderloin

Chef Donnell Johnson's Pork Medallion with a fruit sauce

1 Pork Tenderloin cut in Medallion

½ cup diced Apple

½ cup diced pineapple

½ cup mandarin orange

½ bellpepper cut in thin slices

½ onion cut in thin slices

1 TBS Raisin

1 tbs Cinnamon

Salt & pepper to taste

Olive oil




1 cup orange juice

1 cup apple juice

3 TBS brown sugar

1 TBS cornstarch

¼ cup water


Seasoning pork with salt and pepper and heat sauté pan add olive oil to the pan place pork in pan sauté 3-4 minutes on each side remove the pork from pan and place on a plate pour ½ of the oil from the pan add onions, bellpepper, and sauté for 2 minutes add apple, pineapple, oranges sauté for 2 minutes add cinnamon, raisin and brown sugar sauté 1 minute add sauce and sauté 1 minute pour sauce over pork



Pour orange juice, apple juice and brown sugar in pot bring to a boil add water and cornstarch together and pour in mix
