Mac & Cheese

1 lb. macaroni pasta

3 qts water

4 tbsp sea salt

1/2 stick butter + 1/2 c. sour cream (optional)

4 c. shredded cheddar cheese

1/2 c. parmesan cheese


5 c. milk

1/2 c. roux (1 stick butter 1/2 c. flour)

salt & pepper

1/4 tsp. paprika

1/4 tsp. garlic powder

5-6 drops hot sauce

(1/4 c. bread crumbs for topping casserole)

Cook pasta in boiling salt water for 7-10 minutes.  Drain.  While still hot, add butter & sour cream.  Fold in cheeses.  For sauce: bring milk to a boil.  In a separate pot, melt butter & add flour.  Cook 1-min, then add hot milk, stirring with whisk.  Cook until thickened.  Add garlic powder & paprika.  Fold into pasta.  Pour all ingredients into greased casserole dish.  Top with cheese & dust with bread crumbs.  Bake @ 350 degrees for 40 minutes.
