Corn Beef and Cabbage


3 pounds corned beef brisket with spice packet

5 small red potatoes

3 carrots, peeled and sliced

1 large head cabbage, cut into small wedges


Place corned beef in large pot and cover with water. Add the spice packet that came with the corned beef. Cover pot and back in oven on 350 degrees. Bake approx. 45 minutes per pound or until tender.

Remove from oven and cool completely and thinly slice and set aside.

In a medium pot, add 2 1/2 cups of water, diced red potatoes and carrots. Cover and cook until tender. Approx 20 minutes on medium heat.

Add cabbage to pot and cook an additional 10 minutes until cabbage is tender.

Take mixture and place in a baking dish and top with sliced corned beef.
