Seafood and sausage delight

Chef Ron's Famous Seafood & Sausage Delight
10 large shrimp, peeled, deveined
2 large calimari slice 1/4 inch
1/2 pound smoked sausage cut into 1/4 inch slices
2 tablespoons olive or vegetable oil
1 cloves garlic, finely chopped
1 medium onion, chopped
1 can diced tomatoes
1/2 can of chopped artichoke hearts, drained, and coarsely chopped
1 1/2 cups uncooked rice
2 cups chicken broth
2 teaspoon paprika
1 tablespoon old bay seasoning
1 tablespoon black pepper
1 tablespoon salt
chopped fresh parsley or parmesan cheese, if desired

Saute onion, garlic, and tomatoes until tender. Add artichoke hearts, sausage, shrimp, and calamari to skillet. Cover & simmer for 10 minutes. Prepare as instructed on package. Use chicken broth instead of water. Add seafood mixture to rice and place in a baking dish and bake for 10 minutes on 350 degrees. Top with parmesan cheese and parsley if desired.
