Kairos Salmon Salad

2 heads romaine lettuce (torn into bite size pieces)
2 cups spinach leaves (washed & drained)
1 red onion sliced (like you cut an orange)
1 cup grape tomatoes
1 cup chopped bell peppers
1 cup feta cheese
1 cup mandarin oranges
½ cup chopped fresh Cilantro
½ cup chopped green onions
1 cup honeymustard (see recipe at the bottom)
2 tablespoons Olive Oil
4 pieces Fresh Salmon Fillets marinated in:
One tablespoon of olive oil, One tablespoon of lemon juice, One pinch of fresh Dill (chopped), 1 pinch fresh cracked white pepper, 1 pinch fresh cracked black pepper, 1 pinch sea salt, and one teaspoon of minced garlic.
In a salad bowl toss the romaine lettuce and the spinach. Top with onions, grape tomatoes, peppers, & mandarin oranges.
Sprinkle feta cheese evenly over the top.
Preheat a sauté pan, and add olive oil. Add Fresh Salmon Fillets and sear on one side until golden brown. Turn the salmon over, and cook to the temperature of your choice. Using the end of a spatula, break the salmon into small, bite size pieces. Add honeymustard and cook until a nice glaze forms.
When you're ready to serve the Salad, pour the Salmon on top of the salad, and sprinkle cilantro & green onions over the top.
**For Honeymustard sauce - combine 2 tablespoons of Honey with one Tablespoon of prepared mustard. Add ¼ cup of white vinegar and bring to a boil in a small saucepan. Thicken with 1 tablespoon of cornstarch mixed into a slurry with one Tablespoon of water.
