Chef Bob's Cream of Chicken Soup

Ingredients:
1 carrot, peeled & diced
3 stalks celery, diced
1 onion, diced
3 gloves garlic, minced
1 tablespoon fresh thyme
1 pound chicken, cooked
1 stick butter, unsalted
3 tablespoons plain flour
3 cups chicken stock
1 cup heavy cream
salt & pepper

Directions:
Saute onion, garlic, celery, and carrots for 2-3 minutes in butter. Add flour. Add chicken stock and cream. Add remaining ingredients. Add salt & pepper. Bring to a boil. Serve.
