Organic Oatmeal Lemon Sugar Cookies

ORGANIC OATMEAL-LEMON SUGAR COOKIES

 

 

1 CUP OF ORGANIC WHITE WHOLE WHEAT FLOUR

¾ TEASPOON ALUMINUM FREE BAKIG SODA

¼ TEASPOON SEA SALT

1 CUP ORGANIC UNSALTED, BUTTER, ROOM TEMPERATURE

1 CUP ORGANIC CANE SUGAR

1 TEASPOON ORGANIC LEMON EXTRACT

GRATED LEMON ZEST (RIND) FROM 1 LEMON (ORGANIC)

ORGANIC LEMON SUGAR

1 ½ CUP ORGANIC OLD FASHIONED ROLLED OATS (OATMEAL) UNCOOKED

 

*PREHEAT OVEN TO 350 DEGREES F. LINE BAKING SHEET WITH

PARCHMENT PAPER; SET ASIDE

 

*IN A MEDIUM BOWL, MIX BUTTER AND SUGAR UNTIL CREAMY AND

LIGHT IN COLOR; APPROXIMATELY 4 TO 5 MINUTES. ADD LEMON

EXTRACT AND GRATED LEMON ZEST (RIND); MIX UNTIL BLENDED.

ADD FLOUR, BAKING SODA, AND SALT; MIX UNTIL BLENDED. THEN

ADD OATMEAL AND BLEND WELL.

 

*USING A TABLESPOON MEASURE, SCOOP OUT COOKIE DOUGH AND ROLL IT BETWEEN HANDS TO FORM A BALL.

 

*PLACE THE COOKIE BALLS 2 ½ INCH APART ON THE BAKING SHEET

 

*BAKE UNTIL THE TOPS ARE JUST GOLDEN, APPROXIMATELY 12 MINUTES DEPENDING ON THE SIZE OF THE BALLS. REMOVE FROM THE OVEN AND LET THE COOKIES COOL SLIGHTLY ON THE BAKING SHEET BEFORE TRANSFERING TO A RACK TO COMMPLETELY COOL. SPRINKLE WITH ORGANIC LEMON SUGAR AND ADD SOME LEMON ZEST TO GARNISH.

 

*COOKIES WILL BE THIN, LIGHT, AND AIRY. GREAT FOR TEA PARTIES OR AFTERNOON SNACKS.
