Chef Bob's Sweet Potato Florentine

Chef Bob's Sweet Potato Florentine
(serves 4)

Ingredients:
4 sweet potatoes (washed)
1 onion (sliced and/or diced)
4 cloves garlic (diced)
3 tablespoons olive oil
3 tablespoons butter
1 pound spinach (washed)
1 tomato (diced)
1 cup parmesan cheese
salt & pepper


Directions:
Clean & oil sweet potatoes. Bake at 350 degrees for 35-45 minutes. Saute onion, garlic, & tomato in butter & olive oil. Add salt & pepper. Add spinach and cook until wilted. Top sweet potatoes with spinach mixture. Add parmesan.
