George Sarris' Striped Bass in Lemon-White Wine Sauce

George Sarris' Striped Bass in Lemon-White Wine Sauce

Ingredients:
2 tablespoons extra virgin olive oil
4 striped bass fillets, about 6 ounces each
1 teaspoon capers packed in salt, rinsed
Juice of 1/2 lemon
1 cup dry white wine
1 taespoon buter
Pinch of flour
Salt & freshly ground pepper
1 ripe tomato, chopped

Directions: In a large skillet over medium heat, warm the olive oil. Add the fish & sear each side for about 2 minutes, or until golden brown. Remove the fish from the skillet and keep warm. Add the capers, lemon juice, and wine to the skillet and saute for 2-3 minutes. Add the butter and flour and season with salt & pepper. Saute for 1-2 minutes or until the sauce thickens. Add the tomato and saute for another 1-2 minutes. Place the fish on a serving platter and spoon the sauce over. Serves 4.
