Robert Hennessee's Omelet  
What you will need:
High quality 10 inch non stick sauté/ omelet pan
Spoon Shaped Rubber Spatula
Heart Shaped Cookie Cutters
A Sweetheart (ONE!!)

3 eggs
1oz water
Fresh Tarragon (a small handful)
1 oz Crumbled Goat or Feta Cheese
1tbsp Butter
Fresh Watermelon Slices and / or Large Strawberries
Salt and Pepper to Taste

Place cracked eggs, water, tarragon leaves, salt and pepper in the blender and blend on low speed for about 30 seconds.
Melt butter in the sauté pan on medium heat until butter is melted and foam dissipates.
Pour egg mixture into the pan and begin stirring immediately working the outside edges until you achieve a well developed circle of eggs.  Swirl the pan to distribute uncooked eggs while continuing to shape the outer edges.
Place crumbled cheese on one third of the omelet and gently fold one third over beginning from the handle of the pan.  Using an underhand grip fold the omelet onto a serving plate creating a tri-fold shape.
Garnish with Heart Shaped watermelon pieces and/or strawberries and a sprig of fresh tarragon.
