Sweet Bones Hawaiian style BBQ Pizza

One 12" flour tortilla, toasted

4 oz. Favorite cheese

8 oz. Smoked pork

4 oz Sweet Bones Alabama Red BBQ sauce

2 oz. Grilled Pineapple Pico de Gallo

2 Tbl minced Cilantro

Toss pork in BBQ sauce to coat and spread over toasted tortilla. Drizzle remaining sauce over tortilla from bowl. Spread cheese evenly over the meat and place under the high broiler for 3-5 until cheese is bubbly. Top with 2 -3 Tbl Pineapple Pico de Gallo and then with Cilantro

 

Grilled Pineapple Pico de Gallo

½ cup pineapple

¼ cup diced red onion

¼ cup diced bell pepper

1 TBL minced Cilantro

1 Tbl lime juice

1 Tbl orange juice

¼ tsp Cumin

¼ tsp Chili Powder

Pinch salt

Pinch Cayenne pepper

Grill Pineapple over grill in a grilling Wok until charred. Use high broiler if grill unavailable. Cool pineapple and mix with remaining ingredients. Let sit 3-4 hours or overnight to blend flavors. Use remaining Pico with chips, on grilled chiocken, or fish!
