Caramel Pecan Pie

Caramel Pecan Pie
 
1 Tbsp unflavored gelatin
1/4 cup cold water
1/2 lb caramels
3/4 cup milk
pinch salt
1 cup heavy cream, whipped
1/2 cup pecans, chopped
1 tsp vanilla
 
Soften gelatin in cold water.  Melt caramels in milk over low flame or simmering water.  Add softened gelatin and pinch salt, stir to dissolve.  Chill until slightly set.  Fold in whipped cream, chopped pecans, and vanilla.  Fold in whipped cream, chopped pecans, and vanilla.  Fill crust.  Trim with pecan halves.  Chill 2 to 3 hours.
