Warm Curry Chicken Salad

Ingredients

  • 2 chicken breasts, cooked and sliced
  • 1 teaspoon crushed red pepper flakes
  • 1 onion diced
  • 1 bell pepper diced
  • 1 cup golden raisins
  • 2 tablespoons mayo (optional)
  • 2 tablespoons spicy brown mustard
  • 2 tablespoons honey
  • 2 tablespoons coconut (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • salt
  • black pepper

Sautee onions, pepper, and raisins.  Add chicken, honey, curry, salt, black pepper, red pepper flakes, coconut.  Stir.  Then add mustard & mayo. Stir.
