Quick Black Bean Soup

2 cans black beans

1 can diced tomatoes

1/2 yellow onion,diced

1/2 green bell pepper,diced

1 jalapeno pepper,seeded and diced

2 cups chicken stock

1 tsp fajita seasoning

This is a soup that is fast to prepare and very tasty.Take your beans and mash about half of them.Heat your pot to about medium heat.Combine your chicken stock,tomatoes,and black beans.Stir them together.Add onions,peppers,and seasoning.Bring to a low boil,reduce to simmer.Simmer for about a half hour.Serve nice and hot.Refrigerate the remainder and it will be good for the next 3-4 days.
