Chef Bob's Potato Soup

3-4 Potatoes (diced)
2 shallots     (diced)
3 stalks of celery (strung, diced)
3 T olive oil
2 T plain flour
Salt n Pepper
2 T chopped herbs (your choice)
4 cups Potato water
1.5 cups heavy cream (optional)
 
Blanch diced potatoes in 4-5 cups of water for 5-8 minutes. Saute shallots and celery in olive oil in a heavy bottomed pot for 5 min.  Add 2T flour, salt and pepper and herbs. Stir for one min.  Add potatoes and potato water. Bring to boil and adjust seasoning.  Add heavy cream (optional).  Top with bacon bits and cheese (optional).
