Grandma Hallmark's Chicken and Dressing
1 6-7 lb hen
2 quarts of water
1 T salt
1 T pepper
4 cups chopped onions
4 cups chopped celery
5 slices white loaf bread
8 1/4 cups chicken broth
sage, salt and pepper to taste
cornbread (recipe below)
Place hen in large pot; add water, salt and pepper. Cover and cook until tender. Remove chicken from broth, discard skin and bones. Place onions and celery and 1/4 broth in a saucepan, cover and simmer until tender. Crumble corn bread in a large bowl, add remaining ingredients, mix well. Place chicken pieces in a baking pan, pour dressing over chicken. Bake at 400 degrees for 45 minutes or until brown.
The secret to great dressing is to only make with chicken and to use lots of eggs in your cornbread.
Cornbread for Dressing
3 cups of self-rising corn meal
1/2 cup of self rising flower
8 eggs, beaten
3/4 cup of buttermilk
Mix all ingredients and pour in a 9 inch greased iron skillet. Bake at 450 degrees for 40 minutes.
De-bone a 6-8 lb turkey breast (your butcher can do this for you). Rub with olive oil, salt and pepper. Place in baking dish and cover tightly with foil. Bake in an oven that has been preheated to 450 degrees. Turn heat down to 350 degress and bake about 2 hours or until thickest part registers 175 degrees.
