Lobster & mushroom stuffed filet mignon
2 tbsp. olive oil
1 8 oz. filet
1 lobster tail
2 oz. leeks
1 tsp. garlic
1 c. shitake mushrooms
1/4 c. sundried tomatoes
1.5 c. white wine
1/4 tsp. salt
1/8 tsp. black pepper
Before cooking, marinate sundried tomatoes in white wine.
Heat oil in saute pan. Cut lobster in 1 in. pieces. Cook lobster meat for at least 3 min. Add leeks, garlic, mushrooms, drain sundried tomatoes first, then add...cook 3 min.
Add white wine & reduce by half. Add arugula & turn off heat.
Season steak w/ salt & pepper, butterfly & sear for 5 min each side or until desired cook temp. Place steak in center of plate. Put half of lobster mixture in center of butterflied filet & fold over steak. Pour rest on steak & serve.
