Chef Bob's Mom's Pumpkin Bread

1.5 c. flour

1 tsp. salt

1 c. sugar

1 tsp. baking soda

1 c. pumpkin puree

1/2 c. (can sub with canola or vegetable oil)

2 eggs beaten

1/4 c. water

1/4 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. allspice

1/2 c. pecans

Preheat oven to 350 degrees.  Sift flour, salt, sugar & baking soda.  In separate bowl, combine pumpkin, oil, eggs, water, and spices.  Combine dry ingredients but do not mix too thoroughly.  Stir in nuts.  Pour into buttered 9x5x3 inch loaf pan.  Bake 50-60 minutes until a thn skewer poked in the very center of the loaf comes out clean.  Turn out of the pan and let cool on a rack.
