Hot Shrimp Hors D'oeuvres


Ingredients:
1 tablespoon olive oil
1/2 cup onion, chopped
1/4 cup green onion, chopped
2 tablespoons garlic, minced
1/4 cup white wine
1 lb medium shrimp, devained, tail removed, & cooked
1 cup milk
8 oz cream cheese, cubed
2 cups swiss cheese, shredded
2 teaspoons dried oregano
1-2 teaspoons red pepper flakes

12 fresh lime

Directions:
     Melt butter over medium heat in a large fry pan. Add chopped onion & saute until tender then add minced garlic and simmer until tender. Stir in white wine. Add shrimp & remove from heat.
     In a sauce pan over medium heat, warm the milk. Add cream cheese & whisk until melted. Add swiss cheese & whisk until melted. Add parmesan cheese & whisk until melted. Add oregano, red pepper flakes, and freshly ground pepper to taste.
     Pour mixture into shrimp & mix well over medium heat. Heat until bubbling. Add lime juice & mix well. Pour into serving dish & garnish with chopped chives. Serve with toasted bread slices.


APPLE PECAN GREEN SALAD
INGREDIENTS:
1 BAG OF FRESH SPRIN SALAD MIX
1 BAG OF FRESH ROMAINE LETTUCE, CUT IN SMALL PIECES
1/2 - 1 CUP PECANS (or your favorite nut)
1 CUP APPLES, DICED
1/2 CUP DRIED CRANBERRIES
1 ORANGE CUT IN PIECES
1/4 CUP BLUE CHEESE CRUMBLES

DIRECTIONS:
MIX TOGETHER LETTUCE AND SPRING MIX. TOSS IN APPLES, ORANGES, CRANBERRIES, & PECANS. POUR OLIVE OIL OVER THE TOP. ADD BLUE CHEESE CRUMBLES TO TOP THE SALAD.
