Kairos BBQ Chicken Baked Ziti
Recipe courtesy of James K Jones from Kairos Kafe
3 cups cooked ziti pasta
2 cups cooked, chopped chicken (I use leftover grilled chicken because it adds a lot more flavor)
3/4 cup of your favorite BBQ Sauce
1/2 cup Heavy Cream
Splash of Heavy Cream
1 cup shredded Mozzarella Cheese
1 cup shredded Sharp Cheddar Cheese
1 cup Chopped Cooked Bacon
Sea Salt (to taste)
Cracked White Pepper (to taste)
1 teaspoon minced garlic
1 Chopped Fresh Cilantro
Preheat oven to 375. Spray a 9X12 casserole dish with cooking spray. Put in a splash of heavy cream and even it out into the bottom of the dish. Sprinkle in garlic, and a dash of salt & white pepper. Layer the bottom of the Casserole Dish with half of the ziti, and then evenly layer the chicken.
Sprinkle half of the cheeses evenly over the chicken, and then layer the rest of the pasta over that.
In a bowl combine BBQ Sauce & Heavy Cream. Whip with a whisk until blended together. Spread evenly over the top of the Pasta, and even out with a plastic Spatula. Make sure the pasta is good and wet. If not drizzle a little heavy cream over the top. Evenly Sprinkle the bacon over the top. Cover with aluminum foil and bake for 45 minutes.
Uncover the dish and sprinkle on the cheeses. Cook until cheese is golden brown. This is a quick meal that only needs a salad (or a veggie) and some bread to make it a perfect meal. You can also do the first part of the recipe a day ahead and store in the refrigerator. Just pop it in the oven when you're ready.
