Mustard greens

Ruby Red Mustard Greens

1 bunch Ruby Red Mustard greens (washed, sliced)

1 onion, sliced

3 cloves garlic, sliced

2-3 apples, sliced

2 tbsp. fresh thyme

3 tbsp olive oil

1/4 c. apple cider vinegar

Salt

Sautee onion, garlic, & apples in olive oil.  Add fresh thyme.  Add ruby red mustard greens & sautee like spinach. Add apple cider vinegar & salt.  Cover 2-3 min off heat.

*Cooking idea-- Drain off all liquid from this recipe & lay into a pie shell.  Mix 2 c. heavy cream, 2 eggs & salt & pepper.  Pour over greens.  A very great quiche!
