CHEF BOB'S PUMPKIN PIE

MAKES 1 10" PIE

INGREDIENTS:

2 CUPS PUMPKIN PUREE

1/8 TEASPOON SALT

1/4 TEASPOON NUTMEG

1 1/2 TEASPOON CINNAMON

1/8 TEASPOON CLOVE (OPTIONAL)

1 TEASPOON GROUND GINGER

(OR 2 TEASPOONS PUMPKIN PIE SPICE INSTEAD OF CLOVE & GINGER)

1/2 CUP BROWN SUGAR

1.2 CUP WHITE SUGAR

2 EGGS

1 1/2 CUPS MILK

DIRECTIONS:

MIX EGGS, SUGAR, & SPICES. ADD PUMPKIN. ADD MILK & STIR UNTIL SMOOTH. POUR INTO A 10" PIE CRUST (UNBAKED). BAKE AT 450 DEGREES FOR 10 MINUTES. THEN CONTINUE TO BAKE AT 32 DEGREES FOR 30-35 MINUTES OR UNTIL A KNIFE INSERTED INTHE MIDDLE COMES OUT CLEAN.
