Chef Bob's Grilled Alabama Trout

Ingredients:

2 whole Alabama trout, scaled & cleaned

1 tablespoon of sea salt

3 tablespoons olive oil

4 tablespoons fresh tarragon

ground pepper

4 tablespoons amish butter

Directions:

Make 3 slices into each side of the fish. Cut all the way to the bone. Brush oil all over and inside of the fish. Sprinkle with sea salt and fresh ground pepper. Sprinkle fish with tarragon and place springs inside fish cavity. Place fish in a grill basket or on 2 sheets of heavy duty foil. Place fish on grill for 20 or more minutes - about 10 minutes per side.
