Bruschetta and West Indies salad

Ingredients
- 2 cups diced vine ripe tomatoes
- 1/2 cup red onion diced
- 2 teaspoons extra virgin olive oil
- 4 cooked slices of bacon chopped
- 1 cup bleu cheese
- 1/4 cup chiffanade basil
- 1/2 cup balsamic vinegar
- salt
- freshly ground pepper
- 1 loaf french bread

Directions

Pre heat the oven to 350. Brush the bread with olive oil and bake for 5 min or until crisp. In a medium size bowl, lightly mix the tomatoes, red onions, bacon, basil, bleu cheese, balsamic vinegar, basil, salt and pepper. Sppon the mixture onto the toasted bread.

Ingredients

- 1 cup (1 medium) white onion, minced fine
- 1 bunch green onion, chopped
- 1 cup extra virgin olive oil
- 1 cup champagne vinegar
- 1 pound jumbo lump crab meat (de-shelled)
- 1 cup iced water
- salt
- freshly ground pepper

Directions

In a medium size bowl, layer the white onion, crab then green onion and season with salt and pepper. Then add olive oil, champagne vinegar and ice water and stir. Chill for one hour and serve in a martini glass.
